What’s a foeder you say??? A foeder is a large wooden tank used to ferment and condition beer, wine or cider. In the Bold Monk Cask Room, we have four 465 gallon American Oak foeders handcrafted by Foeder Crafters of America. When Bold Monk was opening, we filled each of these beautiful tanks each with its own special blend of beer, fermented with unique blends of yeast, brettanomyces, lactic bacteria and other micro flora to create distinctly complex and pleasantly funky flavors that only long aging could contribute. Each of these beers is a long term project that the brewing team at Bold Monk will build on through the years bringing a variety of super special limited release beer periodically. Now we introduce to you these four super delicious beers:
RED, RYE AND BLUE– Flanders Red fermented in our foeders then aged in ASW Resurgens Rye barrels with Blueberries 8.1% abv
CORO ROSSO– Mixed fermentation Saison from our foeders then macerated with Nebbiolo grapes. Earthy notes of oak, rose, violets, cherry and vanilla. Amazing! 6.9% abv
VOW– Belgian inspired golden ale fermented first in stainless steel then aged in a foeder with Brett Brux for one year. Gentle tropical funk melds with spicy esters and oak vanillin. 7.1% abv
RUM BARREL VIRTUE OF PATIENCE– Foeder fermented for over a year with a mixed culture of brewer’s yeast, brettanomyces and lactic bacteria then conditioned in a Rhum J.M. XO barrel to produce a gently tart beer with notes of cherry, leather, vanilla and dark rum spice. 7%
